2 cups shredded cooked chicken
6 cups chopped Swiss chard
1 pear, sliced
4 mini peppers, sliced
1/4 cup pine nuts, toasted
1/4 cup extra virgin olive oil
1 shallot, minced
2 tablespoons fresh lemon juice
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
1/4 teaspoon salt
How to Make It
- Preheat oven to 350 degrees
- Wrap the shredded chicken in parchment paper, place it on a baking sheet, and warm for 10 minutes
- In a large bowl, combine the chard, pear, peppers, and pine nuts
- In a small bowl, whisk together the olive oil, shallot, lemon juice, vinegar, mustard, and salt
- Add the dressing to the salad and toss to combine
- Add the warm chicken to the bowl, toss well, and serve immediately
