KALE MUSHROOM TOFU SCRAMBLE
Another super quick 15min meal with minimal prep before hand. It’s also vegan for a #healthydinner 🍽

𝐢𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬 🌱
3.5oz mushrooms (I used Enoki)
200g firm tofu
10g minced garlic
80g kale
2 tbsp nutritional yeast
1 tsp cumin
1/2 tsp Cajun seasoning

𝐝𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬 📌
•cut mushrooms into small pieces
•tear kale into bite size pieces
•add minced garlic to nonstick pan and sauté until fragrant
•add mushrooms and cumin, cook until tender
•crumble tofu into pan and add nutritional yeast
•sauté until mostly cooked (~5mins)
•add kale, salt & pepper to taste and stir it in until wilted
•remove and top with Cajun seasoning (+optional basil leaves to be extra)
