PINEAPPLE CAKE
This is pretty similar to my peach cake recipe since if it isn’t broke don’t fix it. Some small adjustments for a pineapple almond combo which is the perfect #healthydessert 🍽

𝐢𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬 🌱
2/3 cup almond milk
1 tbsp lemon juice
1 cup all purpose flour
pinch of salt (optional)
1 1/2 tsp baking powder
1/4 cup light margarine
1/4 cup sweetener
1 egg
1/4 cup nonfat greek yogurt
1 tsp almond extract (optional)
1 can pineapple rings (~400ml)
2 tbsp light syrup

𝐝𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬 📌
•preheat oven to 350F and line or grease a 8 – 9inch cake pan
•add lemon juice to almond milk
•whisk and allow to sit to make “buttermilk”
•in the meantime, whisk together flour and baking powder
•cream together the margarine and sweetener until combined
•mix in egg, Greek yogurt and extract
•add buttermilk and whisk until smooth
•pour wet ingredients into dry and gently fold until no more flour pocket
•spread syrup along bottom of baking dish then line with pineapple rings
•cut remaining pineapple into small chunks and fold into batter
•pour into pan and bake for 35-40mins
•allow to cool in pan for 10mins
•flip onto a cooling rack so pineapple slices are facing up
