Scrambled tofu has got to be one of the most delicious and satisfying breakfasts there are. The high protein content of the tofu and healthy fats from the avocado 🥑 will keep you satiated for hours, add vegetables and a nice whole grain wrap and you’ve got yourself a seriously powerful breakfast ⚡️⚡️

🌱Scrambled Tofu Wrap Recipe🌱

125g tofu
x2 wraps of your choice I use the chia wraps
30g avocado
6 cherry tomatoes
6 mushrooms chopped
65g spinach
Coconut aminos
1tsp turmeric (you can adjust this to your taste)
Almond milk just to bind
1tbs nutritional yeast
Chilli flakes and black pepper to taste

415 calories 27g protein 58g carbs 10g fat

To cook the tofu I used a small amount of olive oil, cooked the mushrooms them crumbled the tofu on and cooked for 6 min. I then added the coconut aminos and spices and cooked out a little. Then added the spinach and almond milk. Towards the end and my favorite ingredient to add to all food Nutritional Yeast and let the cheesy flavor work it’s magic!!

Then add to the wraps with avocado and tomatoes! Enjoy!!
