World’s Easiest Weeknight Dinner.

Cauliflower Fried Rice!

Toss riced cauliflower, peas, corn & diced bell peppers (either all fresh or all frozen) into a pan with coconut oil, liquid aminos (or some low sodium soy sauce), chili garlic paste or sriracha and a touch of fresh garlic. Cook over medium heat until everything is heated through and at your desired consistency (I like to leave a little bite in my cauliflower rice so it’s not mushy).

We added some pre prepped grilled chicken into ours but would also be great with eggs (scrambled or over easy) and/or shrimp.

I love cauliflower rice for volume eaters and for the added nutritional benefits compared to rice, but don’t forget that you can try all sorts of combinations with something like this. Do half cauliflower rice and half rice or quinoa – for example. It’s a great way to sneak in some extra veggies for a picky eater (child or spouse 🤣) too.
