I think this recipe is a great lunch if you want to save your calories for dinner. Alright its a bit rabbit foodie but hey a girls calorie counting here!

Serves 2:

1 nest of vermicelli rice noodles-cooked,
2 courgettes spiralized,
1 carrot spiralized,
3 tbsp of satay dipping sauce (the one I use is from tescos and is only 23 kcals a tbsp. If not make your own but track the kcals)

Mix it all together and serve. I like to eat mine raw and cold like a salad but you could heat it through in a wok if you’d prefer. If your calories allow you can add chicken to make it more exciting!

Tip- if you don’t have a spiralizer just use a veg peeler and have ribbons instead.
