Mushroom Topping Ingredients⠀⠀
a handful each of crimini, sliced white, and/or shiitake mushrooms ~2 cups combined⠀⠀
1 Tbsp of olive oil⠀⠀
sea salt and black pepper, to taste 🧂⠀⠀
2 Tsp of minced garlic 🧄⠀⠀
1 Tbsp finely chopped parsley (optional)⠀⠀
~2 Tbsp of low sodium tamari sauce or soy!⠀⠀
1-2 tbsp of vegan wine⠀⠀
⠀⠀
BEST Basil Walnut Pesto⠀⠀
1.5 cups tightly packed fresh basil 🌿⠀⠀
1/3 cup walnuts⠀⠀
1/2 cup extra virgin olive oil⠀⠀
4 Tbsp vegan parmesan⠀⠀
sea salt 🧂 + ground pepper to taste 👌🏻⠀⠀
juice of 1 🍋 small lemon⠀⠀
2 garlic cloves, roughly chopped⠀⠀

INSTRUCTIONS:⠀⠀
Instructions 🌟⠀⠀
In a skillet on medium-high heat, warm up your olive oil. Add the garlic and stir often, it burns quickly. Throw the mushrooms in, stir and season with sea salt, tamari and pepper. Allow them to sautée and soften ~4-5 mins. Finally, add your wine and scrape the bits and pieces off the pan, stir for an additional ~2 mins).⠀⠀

Instructions ❤❤⠀⠀
In a food processor: process the basil, garlic and walnuts until smooth. Slowly add the olive oil (through the top opening) while running it. Last, add the vegan parmesan, lemon, seal salt + pepper and pulse again. I do a taste test and add more sea salt/lemon if needed. Store in a sealed glass container in your fridge! Top with a little bit of olive oil before closing it to create another air seal and keep it from drying!⠀⠀⠀
