VEGGIE QUINOA

*Recipe card*
Serves:3-4
Quinoa-1 cup
Ghee/oil-1 tbsp
Mustard seeds-1 tsp
Curry leaves-10-15
Green chillies(chopped)-2
Onion(chopped)-1
French beans (chopped)-1/4cup
Carrot(chopped)-1 medium
Bell peppers(chopped)-1/4cup
Cabbage(chopped)-1/4 cup
Salt (as per taste)
Pepper-1 tsp
Lemon juice-1 tsp
Coriander leaves(for garnish)
Water-2 cups

Method:-
1). In a pan, boil water and add washed quinoa to it. Cook on high flame then lower the flame, cover and cook till done.
2).In another pan, heat oil in a pan, add mustard seeds, let it splutter. Then add green chillies and curry leaves.
3).Add onion, and cook till transparent.
4).After that, add all veggies,salt and cook it covered till tender.
5). Then add cooked quinoa, pepper and lemon juice. Mix well.
6).Garnish with coriander leaves and serve!
